  • 2 cups flour
  • 2 pieces pears (diced) Choose ripe yet firm pears like Bartlett or Bosc.
  • 1 cup sour cream Can be substituted with Greek yogurt.
  • 3/4 cup sugar White sugar can be replaced with coconut sugar.
  • 2 pieces eggs Use at room temperature.
  • 1/2 cup butter (softened) Should also be at room temperature.
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon baking soda
Streusel Topping
  • 1/2 cup flour Sprinkle over the cake.
  • 1/3 cup brown sugar Adds sweetness.
  • 1 tablespoon cinnamon For warm flavor.
  • 1/4 cup cold butter Keep cold for a crumbly texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Cream together the softened butter and sugar until light and fluffy, about 3-5 minutes. Beat in the eggs one at a time.
  3. In a separate bowl, whisk together the flour, baking powder, and baking soda. Gradually add to the creamed mixture, alternating with sour cream until just combined.
  4. Gently fold in the diced pears.
Assembly
  1. Pour half of the batter into the prepared pan and smooth evenly.
  2. Sprinkle half of the streusel topping over the batter.
  3. Add the remaining batter, then sprinkle the rest of the streusel topping.
Baking
  1. Bake for 45-50 minutes. Check for doneness with a toothpick; it should come out clean.
  2. Remove from oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Serving
  1. Slice and serve, optionally with a fresh fruit salad, ice cream, or whipped cream.
