  • 4 tbsp 4 tbsp salted butter, softened
  • 1/4 cup 1/4 cup (30 g) powdered sugar
  • 1 large 1 large egg white
  • 1 pinch Pinch of salt
  • 1/4 tsp 1/4 tsp lemon juice
For sealing and brushing
  • 1 large 1 large egg white, beaten
For the icing
  • 1 cup 1 cup (120 g) powdered sugar
  • 1/2 tsp 1/2 tsp pure vanilla extract
  • 1/4 tsp 1/4 tsp lemon juice
  • 1 pinch Pinch of salt
  • 4 tsp 4 tsp water

Method

Mix the Dough Base
  1. Pulse the all-purpose flour, bread flour, sugar, yeast, and salt in a food processor.
  2. Add the cold butter and pulse 8 to 10 times until the butter pieces are about pea-sized.
Add the Sour Cream
  1. Add the cold sour cream and pulse until the dough begins to clump together.
Chill the Dough
  1. Press the dough into a disc, wrap it, and refrigerate for at least 4 hours.
Fold for Flaky Layers
  1. Roll the dough into an 8x15-inch rectangle. Fold it like a business letter, then turn it 90 degrees, roll, and fold again.
  2. Wrap and chill for 20 minutes. Repeat the process two more times for three total rounds.
Make the Almond Filling
  1. Beat almond paste, softened butter, powdered sugar, egg white, salt, and lemon juice until mostly smooth and spreadable.
Roll and Fill the Dough
  1. Cut the dough in half and roll one half into a 6x24-inch strip. Spread half of the filling down the center.
  2. Fold one long side over the filling, brush with beaten egg white, and fold the other side over and pinch the seam closed.
Form the Kringle Shape
  1. Curve the filled strip into an oval, tuck one end into the other, and seal with egg white.
Let the Kringles Rise
  1. Cover the shaped pastries loosely and let rise for 30 to 45 minutes, until slightly puffy.
Bake Until Deep Golden
  1. Preheat the oven to 375°F. Brush with egg white and bake for 25 to 28 minutes, rotating pans halfway.
Deflate Gently
  1. As soon as the kringles come out of the oven, stack hot pans and press down gently to release trapped air.
Ice and Set
  1. Cool completely before icing. Whisk together powdered sugar, vanilla, lemon juice, salt, and water until smooth. Drizzle over the cooled kringles and let set.

Notes

For best results, use firm, fresh almond paste and chill the dough properly to retain layers. You can substitute some ingredients to suit your taste or available items.
