Ingredients
  

Main Ingredients
  • 1 lb ground beef Look for 80% lean for best flavor.
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas Substitute with fresh green beans or corn if desired.
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce Can be replaced with soy sauce.
  • 2 cups beef broth Use vegetable broth for a vegetarian version.
  • 4 cups mashed potatoes Consider using mashed cauliflower for lower carb.
  • Salt and pepper to taste
  • 1 tbsp olive oil For cooking.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Heat a tablespoon of olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic to the skillet, and sauté for about 3 to 5 minutes until translucent and fragrant.
  3. Add the ground beef to the skillet and cook until browned; drain any excess fat.
  4. Stir in diced carrots, frozen peas, tomato paste, Worcestershire sauce, and beef broth. Season with salt and pepper, and let simmer for about 10 minutes.
Assembly
  1. Transfer the meat and vegetable mixture into a baking dish and spread the mashed potatoes on top.
Baking
  1. Place the baking dish in the preheated oven and bake for 25 to 30 minutes or until golden brown and bubbling.
Serving
  1. Allow to cool for a few minutes before serving to prevent soggy servings.

Notes

This dish makes for excellent leftovers and can be reheated easily. Store in the fridge for up to 3 days and freeze for up to 3 months. Let cool completely before wrapping for freezing.
