Ingredients

For the Waffles
  • 1 cup fine yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp fine sea salt
  • 2 large eggs for binding
  • 1 3/4 cups buttermilk for moisture
  • 1/3 cup unsalted butter, melted plus more for the waffle iron
  • nonstick cooking spray for greasing waffle iron
For the Filling
  • 1 lb cooked turkey, thinly sliced leftover turkey works well
  • 1/2 cup whole berry cranberry sauce
  • 8 slices provolone or Swiss cheese
  • 1/4 cup mayonnaise mixed with 1 tbsp Dijon mustard for spreading

Method

Preparation
  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk the eggs, buttermilk, and melted butter until well blended.
  4. Pour the wet mixture into the dry ingredients and whisk just until no large lumps remain.
Cooking the Waffles
  1. Lightly spray the preheated waffle iron with cooking spray.
  2. Pour about 1/2 cup of batter onto the iron, close the lid, and cook for about 3 to 4 minutes until golden brown and crisp.
  3. Repeat with the remaining batter to make about 4 large waffles.
Assembly
  1. Let the waffles cool for 5 minutes, then cut each one into quarters to make small square slider buns.
  2. Spread the mayonnaise-Dijon mixture on one waffle quarter, then add a slice of cheese, a portion of turkey, and a spoonful of cranberry sauce.
  3. Top with a second waffle quarter to finish the slider.
Serving
  1. Serve the sliders right away while the waffles are still warm.
  2. Secure each slider with a toothpick for easier handling if needed.

Notes

For best results, do not overmix the batter. Assemble sliders just before serving to keep everything warm and fresh.
