Ingredients

For the Cookie
  • 12 oz 12 oz (340 g) all-butter puff pastry, thawed overnight in the refrigerator and kept cold Store-bought alternative to King Arthur's homemade Fast and Easy Puff Pastry
  • 2/3 cup 2/3 cup (132 g) granulated sugar, divided 2 tbsp under the dough, 2 tbsp on top, 1 tbsp in the folds, the rest for coating
  • a little – A little flour, for dusting the rolling pin if needed Use only if the pastry sticks

Method

Preparation
  1. Take the cold puff pastry out of the refrigerator and let it sit for 10 to 15 minutes to soften just enough for rolling.
  2. Sprinkle about 2 tablespoons of sugar over your work surface, then lay the pastry on top and sprinkle another 2 tablespoons of sugar on the dough.
  3. Roll the pastry into an 11 x 14-inch rectangle about 1/16 inch thick, pressing sugar into the dough as you roll. Trim the edges to make them straight.
  4. Fold both short ends toward the center by about 3/4 inch, then sprinkle 1 tablespoon of sugar. Fold the sides inward again to meet in the middle, then fold the whole piece in half to create a layered log.
  5. Wrap the dough log well and refrigerate for 30 minutes to 2 hours.
Baking
  1. Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. Cut the chilled log into 1/2-inch slices, dip both sides in the remaining sugar, and place them cut side up on the prepared baking sheets with 3 inches of space between each.
  3. Bake for 12 to 14 minutes until edges are light golden, then flip each palmier, rotate the pans, and bake for an additional 5 to 8 minutes until deep golden brown and caramelized.
Cooling
  1. Let the cookies cool on the pan for at least 30 minutes to crisp up.
