Preparation
- Take the cold puff pastry out of the refrigerator and let it sit for 10 to 15 minutes to soften just enough for rolling.
- Sprinkle about 2 tablespoons of sugar over your work surface, then lay the pastry on top and sprinkle another 2 tablespoons of sugar on the dough.
- Roll the pastry into an 11 x 14-inch rectangle about 1/16 inch thick, pressing sugar into the dough as you roll. Trim the edges to make them straight.
- Fold both short ends toward the center by about 3/4 inch, then sprinkle 1 tablespoon of sugar. Fold the sides inward again to meet in the middle, then fold the whole piece in half to create a layered log.
- Wrap the dough log well and refrigerate for 30 minutes to 2 hours.
Baking
- Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
- Cut the chilled log into 1/2-inch slices, dip both sides in the remaining sugar, and place them cut side up on the prepared baking sheets with 3 inches of space between each.
- Bake for 12 to 14 minutes until edges are light golden, then flip each palmier, rotate the pans, and bake for an additional 5 to 8 minutes until deep golden brown and caramelized.
Cooling
- Let the cookies cool on the pan for at least 30 minutes to crisp up.
