Ingredients
  

For the Potato Salad
  • 2 pounds potatoes Yukon Gold recommended for buttery flavor.
  • 1 cup mayonnaise Hellmann's preferred for creaminess.
  • 1/4 cup sweet pickle relish Adds tang to the salad.
  • 1/2 cup diced celery For crunch.
  • 1/4 cup diced onion Yellow onion preferred.
  • 1 tablespoon mustard Enhances flavor.
  • to taste salt and pepper Season according to preference.
  • hard-boiled eggs Optional, for garnish.

Method
 

Preparation
  1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and allow to cool.
  2. Once cool, peel and dice the potatoes into small cubes.
  3. In a large mixing bowl, combine the mayonnaise, sweet pickle relish, diced celery, diced onion, mustard, salt, and pepper. Stir gently.
  4. Fold the diced potatoes into the dressing until evenly coated.
  5. Chill the salad covered in plastic wrap for at least 1 hour.
  6. When ready to serve, garnish with sliced hard-boiled eggs if desired.

Notes

Potato salad is best when chilled for at least an hour for flavors to meld. Can be stored in the refrigerator for up to 3 days.
