Preparation
- In a large bowl, combine the chilled mashed potatoes, flour, cheddar cheese, green onions, beaten egg, garlic powder, salt, and pepper. Stir until everything is well mixed and holds together.
- Divide the mixture into 10 even portions, then shape each one into a patty about 2 1/2 inches wide and 1/2 inch thick.
- Lightly coat each patty in flour, then shake off the extra. Place the patties on a tray and refrigerate for 20 minutes.
Cooking
- Heat the olive oil in a large nonstick skillet over medium heat.
- Working in batches, fry the patties for 3 to 4 minutes per side until deeply golden brown, crisp on the outside, and hot in the center.
- Transfer the cooked potato pancake bites to a paper towel-lined plate to drain.
Serving
- Serve the pancake bites warm with a dollop of sour cream and optional extra sliced green onion on top.
Notes
Store cooked pancake bites in an airtight container in the refrigerator for up to 3 days. Uncooked patties can be stored in a single layer with parchment between layers in the fridge for up to 2 days. Freeze cooked bites for up to 2 months. Reheat on the stovetop for the best texture.
