Preparation
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions. Once done, drain and set aside.
Cooking Vegetables
- In a large skillet over medium heat, add a splash of olive oil and sauté the chopped onion and garlic for 1-2 minutes until fragrant.
- Add the sliced zucchini and diced bell pepper to the skillet, cooking until tender.
- Incorporate the fresh spinach, cooking until it wilts.
Preparing Ricotta Mixture
- In a bowl, mix together the ricotta cheese, Italian seasoning, and a pinch of salt and pepper.
Assembling Lasagna
- Spread a thin layer of marinara sauce at the bottom of your baking dish.
- Layer the lasagna noodles, followed by the ricotta mixture, sautéed vegetables, shredded mozzarella, and more marinara sauce.
- Repeat these layers and finish with a final layer of noodles topped with marinara sauce, Parmesan, and remaining mozzarella.
Baking
- Cover the assembled lasagna with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
- Let it sit for a few minutes before slicing and serving.
Notes
Leftover lasagna can be kept in the refrigerator for 3-5 days. It can also be frozen for 2-3 months. When reheating, make sure to steam or cover to retain moisture.
