Ingredients
  

Meatloaf Ingredients
  • 2 lbs ground beef Look for ground beef with a fat content of about 15-20 percent for best results.
  • 1 cup breadcrumbs Can be swapped with crushed crackers or oats for different texture.
  • 2 large eggs Acts as a binder for the meatloaf.
  • 0.5 cup milk Substitute with almond, soy, or oat milk for dairy-free version.
  • 1 onion, finely diced Adds sweetness and depth to the flavor.
  • 2 cloves garlic, minced Provides an aromatic flavor.
  • 1 tsp kosher salt Enhances the flavors of the meatloaf.
Glaze Ingredients
  • 0.5 cup ketchup Base for the glaze.
  • 3 tbsp brown sugar Adds sweetness and depth to the glaze.
  • 1 tbsp apple cider vinegar Cuts through the sweetness with a slight tang.

Method
 

Preparation
  1. Preheat your oven to 350°F. Line a baking sheet with foil and set aside.
  2. In a large bowl, combine ground beef, breadcrumbs, eggs, milk, diced onion, minced garlic, and kosher salt. Mix gently until just combined.
  3. Shape the mixture into a loaf on the prepared baking sheet.
Glazing and Baking
  1. In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar until smooth.
  2. Brush half of the glaze over the top of the meatloaf.
  3. Bake in the preheated oven for 50 minutes.
  4. Remove from the oven and brush with the remaining glaze. Return to the oven and bake for an additional 10 minutes, or until the internal temperature reaches 160°F.
Serving
  1. Let the meatloaf rest for 10 minutes before slicing. Serve warm and enjoy.

Notes

Leftovers can be stored in an airtight container for up to 4 days. For freezing, wrap tightly and store for up to 3 months.
