Ingredients

Main Ingredients
  • 8 pieces small Lady apples or crab apples (or 4 medium apples, quartered and skewered) Washed well and dried, stems removed
  • 8 pieces wooden craft sticks or lollipop sticks
  • 2 cups granulated sugar
  • 3/4 cup light corn syrup
  • 3/4 cup water
  • 1/2 tsp red gel food coloring
  • 1/4 tsp red food-grade candy flavoring oil (optional: cinnamon or cherry) Optional flavoring to enhance taste
  • cooking spray or a silicone baking mat For setting the apples

Method

Preparation
  1. Wash the apples thoroughly and dry them completely, since any moisture can keep the candy from sticking.
  2. Remove the stems and insert a wooden stick firmly into the stem end of each apple, pushing it about halfway through.
  3. Line a baking sheet with a silicone mat or parchment paper lightly sprayed with cooking spray.
Syrup Preparation
  1. In a medium, heavy saucepan, combine the sugar, corn syrup, and water. Cook over medium heat and stir gently only until the sugar dissolves. Then stop stirring completely.
  2. Attach a candy thermometer to the side of the pan. Continue cooking without stirring until the syrup reaches 300 to 310 degrees F, which is the hard-crack stage.
Coloring and Dipping
  1. Remove the pan from the heat as soon as it reaches temperature. Carefully stir in the red food coloring and flavoring oil, if using.
  2. Working fast, tilt the saucepan and dip each apple into the syrup, turning it to coat all sides.
  3. Let any extra syrup drip off for a few seconds, then place the apple stick-side up on the prepared baking sheet.
Setting
  1. Let the apples cool at room temperature for 15 to 20 minutes until the shell is hard and glossy.
  2. Serve them at room temperature for the best bite, and store any leftovers in a cool, dry place.

Notes

Candy apples are best eaten within 24 hours; however, they can be stored for up to 2 days. Avoid the fridge to prevent the candy shell from softening. Freezing is not recommended.
