Preparation
- Fill an Old Fashioned glass with ice and cold water to chill it.
- In a shaker, muddle the sugar cube and Peychaud's bitters until the sugar dissolves.
- Add ice to the shaker, then pour in the rye whiskey.
- Dump out the ice water from the Old Fashioned glass and coat the inside with absinthe.
- Stir the whiskey mixture for about 10 seconds and then strain it into the prepared glass.
- Express the lemon peel over the drink and wipe the rim with it. Place it on top as a garnish.
Notes
Do not skip the chilling step to maintain the cocktail's temperature. Use a gentle hand with the absinthe to avoid overpowering flavors. Stir gently to avoid diluting the drink and always use fresh lemon peel for the best aroma.
