For the Cornbread
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar For sweetness

  • 2 large eggs

For the Honey Butter
  • 1/4 cup unsalted butter, softened For mixing with honey

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and grease a 9-inch round or square baking pan.
  2. In a mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and sugar. Stir well to ensure even distribution.
  3. In another bowl, whisk together the milk, eggs, and melted butter (make sure the melted butter has cooled slightly).
  4. Pour the wet ingredients into the dry mixture and gently stir until just combined. A few lumps are fine; do not overmix.
  5. Pour the batter into your prepared baking pan, spreading it evenly.
  6. Bake in the preheated oven for 20-25 minutes or until the top is golden brown and a toothpick comes out clean when inserted.
Honey Butter Preparation
  1. While the cornbread is baking, mix the softened butter with honey in a small bowl until smooth for your topping.
Serving
  1. Once the cornbread is done baking, let it cool slightly before slicing. Serve it warm with the honey butter.

Notes

This cornbread pairs well with chili, grilled meats, and salads. It can be made gluten-free by using gluten-free all-purpose flour.
