Preparation
- Slice the green tomatoes into 1/4 inch thick slices and set them aside.
- In one bowl, combine the all-purpose flour, salt, black pepper, and cayenne pepper.
- In another bowl, pour the buttermilk.
- Dip each tomato slice first into the buttermilk, allowing excess to drip off, then coat in the flour mixture.
Cooking
- Heat vegetable oil in a frying pan over medium heat, ensuring enough oil to cover the bottom of the pan by at least a quarter inch.
- Place the coated tomato slices in the hot oil, frying each side for about 3-4 minutes or until golden brown.
- Once fried, remove the tomatoes from the oil and place on a plate lined with paper towels to drain excess oil.
- Serve hot as a delicious side dish or appetizer.
Notes
For best results, avoid slicing the tomatoes too thinly and ensure the oil is at the right temperature. Store leftovers in the fridge for up to 2 days or freeze for longer storage.
