  • 1 teaspoon Vanilla extract Warm and sweet; it enhances the flavor.
  • 2 cups All purpose flour
  • 1/4 teaspoon Salt A pinch to balance flavors.
  • 1 cup Pecans, chopped Toast them for better flavor.
  • optional Extra powdered sugar for dusting Add a light dusting for presentation.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, stir the softened butter and powdered sugar until fluffy and smooth.
  3. Add the vanilla extract and mix until well combined.
  4. Sprinkle in the flour and salt, stirring until a soft dough forms.
  5. Fold in the chopped pecans until evenly distributed throughout the dough.
  6. Roll the dough into small balls, about 1 inch in size, and place them on the baking sheet with some space in between.
  7. Lightly press the tops with your fingers or the bottom of a glass.
Baking
  1. Bake for 12 to 15 minutes until the bottoms are set and lightly golden.
  2. Let them cool on the pan for about 5 minutes, then transfer to a rack or plate to cool completely.
  3. Optionally dust with powdered sugar once fully cooled.

Notes

Make sure to chop pecans small for better integration into the dough. Do not overbake to keep cookies tender.
