Ingredients

Main Ingredients
  • 4 large flour tortillas (10-inch)
  • 2 cups cooked turkey, shredded or diced Use moist turkey for best results.
  • 6 slices bacon, cooked crisp and crumbled
  • 2 cups shredded Monterey Jack cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp unsalted butter, softened, for the pan
  • to taste sour cream and salsa, for serving

Method

Preparation
  1. In a medium bowl, combine the shredded turkey, crumbled bacon, and chopped cilantro. Toss everything together so the filling is evenly mixed.
  2. Place the tortillas on a clean work surface. Sprinkle about a quarter of the Monterey Jack and cheddar cheese blend over half of each tortilla.
  3. Spoon a quarter of the turkey-bacon mixture onto each tortilla, over the cheese. Add a little more cheese on top of the filling.
  4. Fold each tortilla in half to make a half-moon shape.
Cooking
  1. Heat a large skillet over medium heat and add about 1/2 tablespoon of softened butter.
  2. Cook the quesadillas one or two at a time, letting each side cook for about 3 to 4 minutes until golden brown and the cheese is fully melted.
Serving
  1. Move the cooked quesadillas to a cutting board and let them rest for 1 to 2 minutes before slicing. Cut into wedges and serve warm with sour cream and salsa.

Notes

For the best results, do not overfill the tortillas, be careful with the heat, and let the quesadillas rest before slicing. This recipe is flexible with ingredients and can be adapted based on what you have on hand.
