- In a mixing bowl, combine the softened cream cheese, sour cream, and taco seasoning. Use a hand mixer or a spatula to mix until the mixture is smooth and free of lumps.
- Gently fold in the shredded cheddar cheese, diced bell pepper, diced tomatoes, and sliced green onions. Be careful not to over-mix; you want to keep some of the texture from the veggies.
- Transfer the dip mixture to a serving dish. Cover it with plastic wrap and refrigerate for at least one hour to allow the flavors to meld.
- When ready to serve, take the dip out of the refrigerator, give it a quick stir if needed, and arrange tortilla chips around the dish.
Notes
Store any leftover dip in an airtight container in the refrigerator for up to 3 days. It can also be frozen for about 2 months, but the texture may change slightly upon thawing. This dish pairs well with crunchy tortilla chips or fresh vegetables.
