  • 1 cup diced tomatoes
  • 1/2 cup sliced green onions Fresh green onions enhance the flavor and texture.

Preparation
  1. In a mixing bowl, combine the softened cream cheese, sour cream, and taco seasoning. Use a hand mixer or a spatula to mix until the mixture is smooth and free of lumps.
  2. Gently fold in the shredded cheddar cheese, diced bell pepper, diced tomatoes, and sliced green onions. Be careful not to over-mix; you want to keep some of the texture from the veggies.
  3. Transfer the dip mixture to a serving dish. Cover it with plastic wrap and refrigerate for at least one hour to allow the flavors to meld.
  4. When ready to serve, take the dip out of the refrigerator, give it a quick stir if needed, and arrange tortilla chips around the dish.

Notes

Store any leftover dip in an airtight container in the refrigerator for up to 3 days. It can also be frozen for about 2 months, but the texture may change slightly upon thawing. This dish pairs well with crunchy tortilla chips or fresh vegetables.
