Ingredients

Main Ingredients
  • 3 lb precooked cotechino sausage in casing (about 3 sausages) Should be pricked with a pin before cooking.
  • 2 cups lentils Use brown or green lentils for a firmer bite if desired.
  • 2 tablespoons extra virgin olive oil Used for cooking lentils.
  • 1/2 teaspoon minced fresh sage
  • 1/2 teaspoon minced fresh thyme
  • 1 sprig rosemary
  • Water, just enough to cover
  • Fine sea salt and black pepper, to taste Season lentils accordingly.
  • 1/2 cup extra virgin olive oil Used for garlic-chili oil.
  • 6 garlic cloves, crushed
  • 1/2 teaspoon red chili pepper flakes Adjust to taste.

Method

Preparation of Lentils
  1. Heat 2 tablespoons of olive oil in a medium saucepan over medium heat. Add sage, thyme, rosemary, and bay leaf, and cook for about 2 minutes.
  2. Add lentils and enough water to cover them. Season with salt and black pepper, bring to a boil, then lower heat. Cover and simmer for 35-45 minutes until lentils are tender and creamy.
Preparing the Cotechino
  1. Prick the cotechino sausage in several places with a pin. Avoid using a fork.
  2. Place cotechino in a large pot half-filled with water, bring to a boil, then lower to medium simmer. Cook for 15-45 minutes until ready.
  3. Remove and place on a dry towel to shed moisture.
Making the Garlic-Chili Oil
  1. Warm 1/2 cup of olive oil in a large pan over medium heat. Add crushed garlic and cook until lightly browned, then discard.
  2. Add chili flakes, turn up heat slightly, and add the sausages immediately.
Browning the Sausage
  1. Brown the sausages evenly on all sides for 5-6 minutes. Let it rest, then slice into 1/4-inch rounds.
Serving
  1. Spoon lentils into bowls and top with cotechino slices. Serve with mashed potatoes or crusty bread if desired.

Notes

Be careful not to overcook the lentils and handle the cotechino gently to prevent bursting. Taste the lentils for seasoning before serving.
