- Start by peeling and dicing the butternut squash. Make sure that the pieces are roughly the same size for even cooking.
- Chop the onion and mince the garlic while you’re at it.
Cooking
- Place the diced butternut squash, ground beef, chopped onion, and minced garlic directly into the crock pot.
- Pour in the beef broth and stir everything to combine.
- Season the mixture evenly with thyme, rosemary, salt, and pepper to elevate the flavors.
- Cover the crock pot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before you plan to serve, stir in the heavy cream for a creamy finish.
- Once everything is cooked through and bubbling, serve hot. If desired, sprinkle with grated Parmesan cheese.
Notes
Store leftovers in the refrigerator for up to three days or freeze for up to three months. Reheat on the stovetop or microwave.
