Ingredients

Main Ingredients
  • 600 mL full-fat milk (or barista oat or almond milk for vegan) For the richest flavor and best foam, use full-fat milk.
  • 1 stick cinnamon stick (about 3 inches) or scant 1/2 tsp ground cinnamon Use ground cinnamon if you don't have a cinnamon stick.
  • 15-30 mL maple syrup or honey Adjust according to your sweetness preference.
  • 10 mL vanilla extract Stir in after removing the cinnamon stick for best flavor.
Optional Toppings
  • whipped cream, nutmeg, marshmallows Add these for extra flavor and presentation.
Optional for Adults
  • 1 splash bourbon, rum, brandy or whiskey Adds depth and warmth to the drink.

Method

Preparation
  1. Add the milk, cinnamon, and maple syrup to a saucepan. Place it over medium heat and stir occasionally. Heat until the milk is steaming but does not boil.
  2. Once heated, remove the cinnamon stick and stir in the vanilla extract.
Frothing
  1. Pour the hot milk into a 1 L French press. Lower the plunger until it sits just under the surface. Pump the plunger briskly until the milk builds a soft microfoam.
Serving
  1. Pour the drink into two mugs, dividing the foam evenly. Top each mug with half a cinnamon stick or a sprinkle of ground cinnamon and nutmeg.
  2. Optionally, add whipped cream or a marshmallow on top.
Alternative Method
  1. If you don't have a French press, shake the hot milk and vanilla in a tightly lidded jar or use a frothing wand according to the maker’s directions.

Notes

Store leftovers in a covered container in the fridge for up to 2 days. The foam will fade but the flavor remains good. Freezing is not ideal, as milk can separate when thawed.
