  • 1 medium butternut squash, peeled and diced
  • 1 can (15 oz) pumpkin puree
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tsp ground cinnamon
  • 0.5 tsp nutmeg
  • Salt and pepper to taste
  • Olive oil for sautéing

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent and softened, about 3-4 minutes.
  2. Add the diced butternut squash to the pot. Stir well and allow it to cook for about 5 minutes.
  3. Pour in the vegetable broth, ensuring it covers the squash. Bring to a boil, then reduce heat and let it simmer until the squash is tender, around 15-20 minutes.
  4. Stir in the pumpkin puree, coconut milk, ground cinnamon, nutmeg, salt, and pepper. Simmer for another 5 minutes.
  5. Using an immersion blender, puree the soup until smooth. Adjust seasoning if necessary.
  6. Remove from heat and serve warm. Garnish with a sprinkle of cinnamon or cracked pepper if desired.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for up to 3 months. Reheat on the stovetop or in the microwave.
