  • 1 pound boneless, skinless chicken breasts, diced Fresh or properly frozen chicken is recommended.
  • 1 cup carrots, sliced Can be replaced with green beans or corn.
  • 1 cup peas
  • 1/2 cup onion, chopped
  • 2 cups chicken broth Vegetable broth can be used for a vegetarian version.
  • 1/2 cup milk Can substitute with coconut milk or dairy-free alternative.
  • 2 tablespoons butter For sautéing.
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme Fresh herbs can enhance flavor.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. In a skillet, melt 2 tablespoons of butter over medium heat. Add 1/2 cup of chopped onions and sauté them until they become translucent.
  2. Add 1 pound of diced chicken breasts to the skillet. Cook until the chicken is lightly golden, stirring occasionally.
  3. Stir in 1 cup of sliced carrots and 1 cup of peas. Pour in 2 cups of chicken broth and 1/2 cup of milk. Add 1 teaspoon of garlic powder, 1 teaspoon of thyme, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix everything well.
  4. Bring the mixture to a gentle simmer and allow it to cook for 10-15 minutes to meld and thicken the flavors.
  5. Preheat your oven to 375°F (190°C). Pour the mixture into a pie dish.
  6. Cover the chicken mixture with 1 pre-made pie crust, ensuring the edges are sealed. Create slits on top of the crust to allow steam to escape.
  7. Bake the pie in the oven for 25-30 minutes, or until the crust is golden brown and flaky.
  8. Remove the pot pie from the oven and let it cool for a few minutes before slicing. Serve warm.

Notes

This dish is great for potlucks and reheats well. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
