  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced

  • 9 ounces fresh spinach Kale or Swiss chard can be used as substitutes.
  • 12 ounces cheese tortellini Whole wheat tortellini or other pasta can be swapped.
  • to taste salt and pepper Essential for seasoning.
  • 1 tablespoon olive oil For sautéing.

Preparation
  1. In a large pot, heat olive oil over medium heat. Add the turkey sausage, breaking it apart with a spoon. Cook until it is well-browned, about 5-7 minutes.
  2. Add the diced onion, carrots, and celery to the pot. Sauté these vegetables for 4-5 minutes or until they are softened. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. Add the cheese tortellini to the pot. Cook according to package instructions, usually around 3-5 minutes, until they are tender yet slightly firm.
  5. Gently stir in the fresh spinach and allow it to wilt for just a minute or two.
  6. Season the soup with salt and pepper to taste. Give it a good stir and serve warm.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months. Reheat on the stovetop or microwave.
