Ingredients

Main Ingredients
  • 6 oz dried chipped beef, sliced beef jar or packaged Soak in hot water for 3 to 5 minutes if very salty.
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 1 tsp freshly ground black pepper Use freshly cracked for a stronger flavor.
  • 4 cups whole milk 2% milk can be used, but sauce will be less rich.
  • to taste salt Usually little or none is needed due to the salty beef.
  • 8 slices white or whole wheat bread, toasted or warm split biscuits Use biscuits for a softer serving style.

Method

Preparation
  1. Remove the dried beef from the package. If it tastes very salty, soak it in hot water for 3 to 5 minutes, then drain and squeeze it dry. Tear or slice it into bite-size strips.
Cooking
  1. Melt the butter in a large skillet over medium-low heat. Whisk in the flour until smooth and cook for about 1 minute without letting it brown.
  2. Whisk in the pepper first, then slowly pour in the milk while whisking constantly to prevent lumps.
  3. Let the sauce simmer gently, whisking often for about 5 minutes until it thickens enough to coat the back of a spoon.
  4. Stir in the beef strips and simmer for 2 to 3 minutes just until heated through.
  5. Taste the sauce before adding salt. Toast the bread and spoon the creamed beef generously over each slice.
