Preparation
- Start by shredding your cooked chicken, and mashing the ripe avocado in a bowl.
- In the bowl, combine the shredded chicken, mashed avocado, Greek yogurt or mayonnaise, lime juice, chopped red onion, and celery. Mix everything gently until all the ingredients are well coated.
- Season your mixture with salt and pepper, making sure to taste along the way. Adjust the seasoning as necessary.
- Take a whole wheat tortilla and place a generous amount of the chicken salad mixture in the center. If using lettuce, lay that down first.
- Carefully roll the tortilla tightly around the filling, ensuring it's wrapped well.
- Slice the wrap in half and place it on a plate. Enjoy right away or store it for later!
Notes
Store leftover chicken salad in an airtight container in the fridge for up to 3 days. Chicken salad can be frozen for up to 3 months; thaw in the fridge before using.
