Preparation
- Preheat your oven to 350°F (175°C).
- Cook the macaroni according to package instructions until just al dente. Drain and set aside.
Making the Cheese Sauce
- In a medium saucepan, melt the butter over medium heat.
- Add the flour, garlic powder, onion powder, salt, and pepper. Stir for about one minute until it forms a roux.
- Gradually whisk in the milk and cream; continue whisking until the mixture is smooth and begins to thicken, about 3-5 minutes.
- Stir in the pureed butternut squash and shredded cheddar cheese until fully melted and the sauce is creamy.
Combining and Baking
- Gently fold the cooked macaroni into the cheese sauce until well-coated.
- Pour the mixture into a greased baking dish. Top with grated Parmesan cheese and breadcrumbs, if using.
- Bake for 25-30 minutes, or until the top is bubbly and golden brown.
Serving
- Allow the dish to cool for a few minutes before serving to help set the cheese sauce.
Notes
Store leftovers in an airtight container for up to 3 days in the refrigerator. This dish can be frozen for up to 3 months before baking. Reheat in the oven at 350°F until warmed through.
