Butternut Squash Preparation
  • 2 cups butternut squash, roasted and pureed Roast before pureeing for enhanced flavor
Sauce Ingredients
  • 2 tablespoons butter For making the roux
  • 2 tablespoons all-purpose flour To thicken the sauce
  • 1 teaspoon garlic powder Adds flavor to the sauce
  • 1 teaspoon onion powder Adds flavor to the sauce

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the macaroni according to package instructions until just al dente. Drain and set aside.
Making the Cheese Sauce
  1. In a medium saucepan, melt the butter over medium heat.
  2. Add the flour, garlic powder, onion powder, salt, and pepper. Stir for about one minute until it forms a roux.
  3. Gradually whisk in the milk and cream; continue whisking until the mixture is smooth and begins to thicken, about 3-5 minutes.
  4. Stir in the pureed butternut squash and shredded cheddar cheese until fully melted and the sauce is creamy.
Combining and Baking
  1. Gently fold the cooked macaroni into the cheese sauce until well-coated.
  2. Pour the mixture into a greased baking dish. Top with grated Parmesan cheese and breadcrumbs, if using.
  3. Bake for 25-30 minutes, or until the top is bubbly and golden brown.
Serving
  1. Allow the dish to cool for a few minutes before serving to help set the cheese sauce.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator. This dish can be frozen for up to 3 months before baking. Reheat in the oven at 350°F until warmed through.
