  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth Choose according to preference.
  • 1 cup milk or cream For a richer flavor, use cream.
  • 2 cups shredded cheddar cheese Can substitute with provolone or gouda.
  • 2 tablespoons butter Can be substituted with olive oil.
  • Salt and pepper to taste Seasoning is key.
  • Optional: croutons for topping Try adding toasted nuts for crunch.

Preparation
  1. Melt the butter in a large pot over medium heat.
  2. Add the diced onion and minced garlic; sauté until the onion becomes translucent, about 3-4 minutes.
Cooking
  1. Add the broccoli florets and broth; increase heat to bring to a gentle simmer.
  2. Cook until the broccoli is tender, around 10 minutes.
  3. Blend the soup until smooth using an immersion blender or by carefully transferring it to a regular blender.
  4. Return the blended soup to the pot over low heat.
  5. Stir in the milk or cream and cheddar cheese; mix well until the cheese melts.
  6. Taste and add salt and pepper according to preference.
Serving
  1. Serve hot, ladling the soup into bowls and topping with croutons if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat on stovetop or microwave, stirring well.
