  • 2 cups cooked rice Use white or brown rice.
  • 2 cups broccoli florets Fresh or frozen, thawed and drained.
  • 2 cups cooked chicken, shredded Shredded rotisserie chicken works great.
  • 1 can cream of mushroom soup Can substitute with cream of celery or chicken soup.
  • 1 cup shredded cheese Cheddar or your choice.
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper To taste.
  • 1/2 cup breadcrumbs Optional for topping.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray or butter.
  2. In a large mixing bowl, combine the cooked rice, broccoli florets, shredded chicken, cream of mushroom soup, milk, garlic powder, and shredded cheese. Stir until everything is well mixed and creamy.
  3. Add salt and pepper as desired to enhance the flavors of your mixture. Taste before proceeding.
  4. Pour the rice and chicken mixture into the greased baking dish, spreading it evenly.
  5. If you enjoy a crunchy topping, sprinkle breadcrumbs generously over the top.
  6. Place the baking dish in the oven and bake for 25-30 minutes or until bubbly and the top is lightly golden.
  7. Once baked, remove from the oven and let it cool slightly before serving. This will make for easier portions.

Notes

Allow leftovers to cool completely before storing in an airtight container. In the fridge, it lasts for about 3-4 days. For longer storage, freeze tightly wrapped for 2-3 months. Reheat individual portions on the stovetop or microwave.
