  • 1 cup granulated sugar
  • 8 oz cream cheese, softened
  • 15 oz pure pumpkin puree
  • 3 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
  • 0.5 cups caramel sauce

Preparation
  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed. Press this mixture firmly into the bottom of a 9-inch springform pan to form a solid crust.
  2. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth. Add in the pumpkin puree, eggs, vanilla extract, ground cinnamon, nutmeg, and ginger, mixing until well blended.
  3. Pour the creamy pumpkin mixture over the pre-prepared graham cracker crust in the springform pan, smoothing it out with a spatula.
Baking
  1. Drizzle the caramel sauce over the top of the cheesecake filling. Using a knife, gently swirl the caramel into the pumpkin mixture to create a marbled effect.
  2. Place the springform pan in the preheated oven and bake for 50-60 minutes, until the center is slightly jiggly.
