Method
Preparation
- Preheat the oven to 400°F. Cook the spiral pasta according to the package directions, then drain it well and place it in a large bowl. Optionally salt the pasta water and save 2 tablespoons of the cooking water for the sauce.
Making the Sauce
- In the same pot, stir together the milk, ranch dressing, and ranch dressing mix until smooth. Add the cream cheese cubes and cook over medium heat until melted, stirring often.
Mixing
- Add the cubed chicken, crumbled bacon, and 1 cup of the shredded Colby cheese to the pasta mixture. Stir gently until well combined.
Baking
- Transfer the mixture to a greased 13x9-inch baking dish. Sprinkle the remaining 1 cup of Colby cheese on top. Bake uncovered for 15 to 20 minutes, until heated through and cheese is melted.
Serving
- Allow the casserole to rest for a few minutes before serving. Optionally, sprinkle sliced green onions on top before serving.
Notes
Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat in the microwave or oven, and consider adding a splash of milk when reheating to restore creaminess.
