  • 1 lb chicken breast, diced Boneless, skinless preferred.
  • 1 piece bell pepper, sliced Any color works.
  • 1 piece onion, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream Could substitute with half-and-half or full-fat coconut milk.
  • 1 cup chicken broth Vegetable broth can be used for a vegetarian option.
  • 2 tsp fajita seasoning Can substitute with taco seasoning.
  • Salt and pepper to taste
  • Olive oil for cooking
  • Chopped cilantro for garnish Fresh parsley can be used as a substitute.

Preparation
  1. Start by heating a couple of tablespoons of olive oil in a skillet over medium heat.
  2. Add the diced chicken to the heated skillet and sauté until it is no longer pink in the center, about 5-7 minutes.
  3. Once the chicken is cooked through, add the sliced bell pepper, onion, and minced garlic. Sauté until the vegetables are crisp-tender, about 3-4 minutes.
  4. Pour in the heavy cream and chicken broth. Sprinkle in the fajita seasoning, stirring everything to combine well.
  5. Let the mixture simmer for about 5 minutes, allowing the sauce to thicken slightly.
  6. Taste the sauce and season with salt and pepper according to your preference. Garnish with chopped cilantro before serving.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months. Reheat on stovetop over medium heat or microwave.
