- If you're using rotisserie chicken, shred it and set it aside. If you're cooking chicken, poach or bake it, then shred it when it has cooled slightly.
- In a large bowl, combine the shredded chicken, diced dill pickles, mayonnaise, Greek yogurt, chopped dill, Dijon mustard, salt, and pepper. Stir until everything is well mixed and coated in the creamy dressing.
- Carefully slice the tops off the large tomatoes and use a spoon to scoop out the insides. Ensure they are sturdy enough to hold the filling.
- Spoon the chicken salad mixture into each hollowed-out tomato. Fill them generously but avoid pressing too tightly.
- Refrigerate the stuffed tomatoes for at least 30 minutes before serving to allow the flavors to meld and enjoy them cold.
Notes
Avoid overfilling the tomatoes to prevent them from becoming soggy. Taste your mixture for seasoning before serving. Use fresh, firm tomatoes for best results.
