Preparation and Cooking
- Season the chicken breasts with the salt and pepper, then dredge them lightly in the flour. Shake off any extra flour so the coating stays thin and even.
- Heat the olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add the chicken and cook for 5 to 6 minutes per side, until golden brown and the internal temperature reaches 165°F. Transfer to a plate and tent with foil.
- Reduce the heat to medium and melt the remaining 2 tbsp butter in the same skillet. Add the mushrooms in a single layer and let them cook for 3 to 4 minutes undisturbed.
- Stir the mushrooms and keep cooking for another 4 to 5 minutes until deeply golden.
- Add the minced shallot and cook for about 2 minutes until softened. Then add the garlic and cook for 30 seconds. Pour in the white wine and scrape up the browned bits from the pan. Let it simmer for 2 to 3 minutes, until reduced by half.
- Add the chicken broth, heavy cream, and Dijon mustard. Bring the mixture to a gentle simmer and cook for 4 to 5 minutes until slightly thickened.
- Put the chicken back into the skillet and nestle it into the sauce. Top with a slice of Swiss cheese. Cover and cook for 2 to 3 minutes until the cheese melts.
- Taste the sauce and add more salt if needed. Finish with fresh thyme and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze in a freezer-safe container for 2 months. Reheat gently, adding broth or cream if the sauce is too thick.
