  • 2 leeks, cleaned and sliced
  • 1 onion, chopped
  • 4 cups vegetable or chicken broth Use vegetable broth for a vegetarian option.
  • 1 cup heavy cream Can be substituted with half-and-half or Greek yogurt.
  • 1 cup shredded cheddar cheese Can be substituted with Gruyère or Monterey Jack.
  • 2 tablespoons olive oil or butter Can replace olive oil with ghee or coconut oil.
  • Salt and pepper to taste Be cautious with seasoning.
  • Chives for garnish (optional)

Preparation
  1. In a large pot, heat the olive oil or butter over medium heat.
  2. Add the chopped onion and leeks, and sauté until soft and fragrant, about 5-7 minutes.
  3. Add the diced potatoes and the broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  4. Once the potatoes are cooked, blend the soup using an immersion blender or transfer it in batches to a blender until smooth.
  5. Return the blended soup to the pot, stir in the heavy cream and shredded cheddar cheese, and heat gently on low until the cheese melts.
  6. Season with salt and pepper to taste and serve warm, garnished with chives if desired.
