Preparation
- Preheat your oven to 400°F (200°C). Wrap the head of garlic in aluminum foil and place it in the oven for about 30-35 minutes until soft and fragrant.
- While the garlic roasts, bring a large pot of salted water to a boil. Add the cubed potatoes and let them cook for about 15 minutes or until tender.
- Once the potatoes are tender, drain them in a colander and return them to the pot to evaporate excess moisture.
- Squeeze the roasted garlic into the pot with the potatoes.
- Stir in the milk, sour cream, and butter, and mash the mixture together until reaching your desired smoothness.
- Taste your mashed potatoes and season with salt and pepper. Transfer to a serving bowl and garnish with fresh herbs.
Notes
Store leftovers in an airtight container in the fridge for up to three days. Freeze for up to three months to preserve longer. Reheat on the stovetop, adding a splash of milk or cream to restore creaminess.
