- In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, and sauté until they become translucent and fragrant, about 3-4 minutes.
- Add the diced potatoes to the pot along with the vegetable broth. Bring to a boil, then reduce heat and let simmer until the potatoes are tender, about 10-15 minutes.
- Stir in the sweet corn and let the mixture simmer for an additional 15-20 minutes, allowing the flavors to meld.
- Carefully blend the soup using an immersion blender until smooth. Leave some chunks of potatoes and corn unblended for texture.
- Stir in the heavy cream and season with salt and pepper to taste. Heat gently to warm through, avoiding boiling.
- Serve hot in bowls, garnished with chopped chives.
Notes
Store leftovers in the fridge for up to 3 days or freeze for up to 3 months (leave off cream until reheating). Reheat gently on stovetop or microwave.
