Preparation
  1. In a medium-sized saucepan, combine the can of diced tomatoes and the vegetable broth. Set the heat to medium, allowing the mixture to begin heating up.
  2. Bring the mixture to a gentle simmer and let it cook for about five minutes to enhance the flavors.
  3. Stir in the heavy cream, garlic powder, onion powder, salt, and pepper. Mix well to combine.
  4. Continue cooking for an additional 2-3 minutes to meld the flavors, stirring occasionally.
  5. Use an immersion blender to blend the mixture until smooth or leave it chunky if preferred.
  6. Ladle the hot soup into bowls and garnish with fresh basil before serving.

Notes

Perfect for potlucks and pairs wonderfully with crusty bread or grilled cheese sandwiches. Store leftovers in the fridge for up to 3 days or freeze for up to 3 months. Reheat slowly on the stovetop or in the microwave with short intervals.
