Preparation
- Cook the pasta according to the package instructions. Once done, drain it well and set it aside.
- In a large skillet, heat the olive oil over medium heat. Add the cubed chicken to the pan and cook until it's browned and thoroughly cooked, about 6 to 8 minutes.
- Once the chicken is cooked through, add the minced garlic to the skillet and sauté for about 1 minute or until fragrant. Be careful not to let it burn.
- Pour in the heavy cream and chicken broth, stirring well to combine. Let the mixture come to a gentle simmer as it begins to thicken up.
- Add the chopped sun-dried tomatoes and fresh spinach into the skillet. Stir them into the sauce and cook until the spinach has wilted down.
- Next, add the grated Parmesan cheese into the skillet and stir until it melts and creates a creamy consistency.
- Taste the mixture and season with salt and pepper according to your preference. Once seasoned, add the cooked pasta to the skillet and toss to coat every strand in the delicious sauce.
- Serve the pasta hot, garnished with fresh basil for a pop of color and flavor.
Notes
Store leftovers in an airtight container for up to 3 days. This dish freezes well for up to 2 months. For reheating, add a splash of chicken broth or cream to maintain its creamy texture.
