Main ingredients
  • 8 ounces pasta (fettuccine or penne)
  • 2 tablespoons olive oil
  • 1 pound chicken breast, cubed Look for plump pieces with a uniform color.
  • 4 cloves garlic, minced Sauté until fragrant, but do not let it burn.
  • 1 cup heavy cream Can substitute with half-and-half or Greek yogurt for a lighter version.
  • 1 cup chicken broth Vegetable broth can be used for a vegetarian option.
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups spinach Kale or arugula can be used for a different flavor.
  • 1/2 cup Parmesan cheese, grated Nutritional yeast is a great dairy-free alternative.
  • to taste Salt and pepper Be cautious with salt due to the flavor from sun-dried tomatoes and Parmesan.
  • to garnish Fresh basil Used for garnish.

Method

Preparation
  1. Cook the pasta according to the package instructions. Once done, drain it well and set it aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the cubed chicken to the pan and cook until it's browned and thoroughly cooked, about 6 to 8 minutes.
  3. Once the chicken is cooked through, add the minced garlic to the skillet and sauté for about 1 minute or until fragrant. Be careful not to let it burn.
  4. Pour in the heavy cream and chicken broth, stirring well to combine. Let the mixture come to a gentle simmer as it begins to thicken up.
  5. Add the chopped sun-dried tomatoes and fresh spinach into the skillet. Stir them into the sauce and cook until the spinach has wilted down.
  6. Next, add the grated Parmesan cheese into the skillet and stir until it melts and creates a creamy consistency.
  7. Taste the mixture and season with salt and pepper according to your preference. Once seasoned, add the cooked pasta to the skillet and toss to coat every strand in the delicious sauce.
  8. Serve the pasta hot, garnished with fresh basil for a pop of color and flavor.

Notes
