  • 16 oz mushrooms (sliced) Sauté until golden brown, avoiding overcooking.
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 2 cups heavy cream Can be substituted with half-and-half or milk for a lighter option.
  • 1 cup chicken broth Vegetable broth can be used for a vegetarian option.
  • 1 cup shredded Gruyère cheese Mozzarella or Cheddar can be used as substitutes.
  • 3 tbsp butter
  • 1 tsp thyme
  • to taste salt and pepper Important to season throughout the cooking process.
  • to garnish fresh parsley

Method
 

Preparation
  1. Begin by preheating your oven to 375°F (190°C). In a large skillet, melt the butter over medium heat.
  2. Add the sliced mushrooms to the skillet and sauté until golden brown, about 6 minutes, then add the diced onion and cook for another 4 minutes.
  3. Add minced garlic and thyme, cooking for an additional minute.
  4. Add heavy cream and chicken broth to the skillet, allowing to simmer gently for about 5 minutes.
  5. In a large baking dish, combine the creamy mixture with the cooked wild rice and season generously with salt and pepper.
  6. Sprinkle shredded Gruyère cheese evenly over the top.
Baking
  1. Place the baking dish in the preheated oven and bake for about 25-30 minutes until bubbly and golden brown.
  2. Garnish with fresh parsley before serving.

Notes

This casserole is versatile, serving well as a main course or side. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
