Preparation
- In a large bowl, combine the cooked shredded chicken, Mexican blend cheese, softened cream cheese, salsa verde, cumin, and chili powder. Mix well until the mixture is creamy with no large lumps.
- Wrap corn tortillas in a damp paper towel and microwave for about 30 seconds to soften them.
Rolling
- Take one tortilla and place about two tablespoons of the chicken filling along the bottom edge. Roll the tortilla tightly over the filling, securing with a toothpick if necessary.
- Repeat the rolling process with the remaining tortillas and filling.
Cooking
- Preheat your air fryer to 400°F (204°C) and lightly spray the basket with cooking spray.
- Arrange taquitos seam-side down in a single layer and air fry for 8 to 10 minutes, turning halfway through until golden and crispy.
Serving
- Remove taquitos from the air fryer and serve hot with guacamole and sour cream on the side.
Storage
- Store cooked taquitos in an airtight container in the refrigerator for up to three days. Reheat in the air fryer at 375°F for 4 to 5 minutes.
Notes
For best results, avoid overcrowding the air fryer basket and use freshly softened cream cheese. Can substitute chicken with turkey, pork, or beef. Serve with fresh sides for a complete meal.
