Preparation
- Start by placing the flaked salmon into a large mixing bowl. Add half of the panko breadcrumbs, mayonnaise, egg, chopped parsley, minced green onion, fresh lemon juice, Dijon mustard, and kosher salt. Use a spatula or your hands to gently mix everything together. Stir just until the ingredients are combined—avoid overmixing to keep the texture light.
- Divide the salmon mixture evenly and form it into 8 round patties, each about half an inch thick. Pour the remaining panko breadcrumbs onto a plate. Press both sides of each patty into the panko crumbs to fully coat them.
- Place the coated patties on a tray or plate and refrigerate them for 20 minutes.
Cooking
- Preheat your air fryer to 375 degrees Fahrenheit. Spray the basket lightly with cooking spray. Arrange the patties in a single layer, making sure they don’t touch. Spray both sides of each patty with cooking spray.
- Cook for 5 minutes, then carefully flip and spray again. Continue cooking for another 5 to 6 minutes, or until the patties are golden brown and heated through.
Serving
- Remove the patties from the air fryer and serve them warm with lemon wedges on the side.
Notes
Store leftover salmon patties in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage. Reheat in the air fryer or stovetop.
