  • 1.5 lbs cooked salmon, flaked (or 2 cans 14.75 oz salmon, drained) Wild-caught pink or sockeye varieties are recommended.
  • 1 cup panko breadcrumbs, divided For coating the patties.
  • 1/4 cup mayonnaise Can be substituted with Greek yogurt or mashed avocado.
  • 1 large egg Acts as a binder.
  • 2 tbsp fresh parsley, chopped Can substitute with dill or cilantro.
  • 2 tbsp green onion, minced Can swap with shallots or chives.
  • 1 tbsp fresh lemon juice Add lemon zest for additional flavor if desired.
  • 1 tsp Dijon mustard Substitute with whole grain mustard if preferred.
  • 1/2 tsp kosher salt Enhances the flavors.
  • cooking spray For greasing the air fryer basket.
  • lemon wedges, for serving Adds a burst of citrus.

Method
 

Preparation
  1. Start by placing the flaked salmon into a large mixing bowl. Add half of the panko breadcrumbs, mayonnaise, egg, chopped parsley, minced green onion, fresh lemon juice, Dijon mustard, and kosher salt. Use a spatula or your hands to gently mix everything together. Stir just until the ingredients are combined—avoid overmixing to keep the texture light.
  2. Divide the salmon mixture evenly and form it into 8 round patties, each about half an inch thick. Pour the remaining panko breadcrumbs onto a plate. Press both sides of each patty into the panko crumbs to fully coat them.
  3. Place the coated patties on a tray or plate and refrigerate them for 20 minutes.
Cooking
  1. Preheat your air fryer to 375 degrees Fahrenheit. Spray the basket lightly with cooking spray. Arrange the patties in a single layer, making sure they don’t touch. Spray both sides of each patty with cooking spray.
  2. Cook for 5 minutes, then carefully flip and spray again. Continue cooking for another 5 to 6 minutes, or until the patties are golden brown and heated through.
Serving
  1. Remove the patties from the air fryer and serve them warm with lemon wedges on the side.

Notes

Store leftover salmon patties in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage. Reheat in the air fryer or stovetop.
