Preparation
- Cut off the top of each onion and place them root-side down on a cutting board. Carefully slice the onion from about 1/2 inch above the root, making 12 to 16 wedges, keeping the root intact.
- Soak the cut onions in a bowl of ice water for 30 minutes to help separate the petals.
Breading
- While the onions soak, combine the flour, paprika, garlic powder, and cayenne pepper in a shallow bowl.
- In another bowl, whisk together the eggs and buttermilk until smooth.
- Set the panko breadcrumbs in a third shallow bowl.
Assembly
- Remove the onions from the ice water and shake off excess liquid. Dip each onion first in the seasoned flour, then in the egg mixture, and finally into the panko, ensuring thorough coverage between the petals.
Baking
- Preheat the oven to 425°F. Line a baking sheet with parchment paper or foil. Place breaded onions cut-side up on the sheet and spray generously with cooking spray.
- Bake for 28 to 30 minutes until the petals are golden and crispy.
Serving
- While the onions bake, whisk together the spicy dipping sauce ingredients. Serve the baked onions warm with the sauce on the side.
