Preparation
- Preheat your oven to 425°F. Line a rimmed baking sheet with foil and set a wire rack on top.
- Pat the chicken thighs dry thoroughly with paper towels.
- Season both sides with 1 teaspoon kosher salt and black pepper. Set aside.
Making the Glaze
- In a medium bowl, whisk together honey, Dijon mustard, whole grain mustard, olive oil, minced garlic, dried thyme, and the remaining 1/2 teaspoon kosher salt until smooth.
Coating and Baking
- Coat each chicken thigh generously on all sides with the honey mustard glaze. Reserve about 1/4 cup of the glaze for basting later.
- Place chicken thighs skin-side up on the wire rack.
- Bake the chicken for 35 to 40 minutes. At the 20-minute mark, brush with the reserved glaze.
Finishing Up
- Once fully cooked and golden, remove from the oven and let rest for 5 minutes.
- Garnish with fresh thyme leaves and serve warm.
Notes
Make sure to dry the chicken thoroughly for crispy skin. Ensure good airflow around the chicken during baking by using a wire rack.
