Ingredients
  

For the Fries
  • 3 medium medium zucchini, cut into 3-inch by 1/2-inch sticks Choose firm, smooth zucchini.
  • 1/2 cup all-purpose flour Gluten-free all-purpose flour can be used.
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs Gluten-free panko can be swapped.
  • 1/2 cup freshly grated Parmesan cheese Can substitute with Pecorino Romano.
  • 1 tsp garlic powder
  • 1 tsp dried Italian seasoning Can include oregano or thyme.
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper
  • nonstick cooking spray For coating the wire rack.
  • marinara sauce, warmed, for dipping Fresh marinara is recommended.
  • fresh basil, chopped, for garnish

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper, then place a wire rack on top and spray with nonstick cooking spray.
  2. Lay the zucchini sticks on a clean kitchen towel or paper towels and let them sit for 10 minutes. Pat them dry very well.
  3. Set up three shallow dishes for breading: flour in the first, beaten eggs in the second, and a mixture of panko breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper in the third.
Coating
  1. Dredge each zucchini stick in flour, shake off excess, dip in beaten eggs, then press firmly into the panko mixture to coat.
Baking
  1. Place coated zucchini sticks on the prepared wire rack in a single layer, lightly spray the tops with cooking spray.
  2. Bake for 20 to 25 minutes, flipping halfway through, until golden brown and crisp. Optional: Broil for 1 to 2 minutes for a darker finish, watching closely to avoid burning.
Serving
  1. Sprinkle with chopped fresh basil and serve immediately with warm marinara sauce for dipping.

Notes

Best eaten fresh due to coating softening as they sit. Store leftovers in an airtight container in the refrigerator for up to 2 days.
