Method
 

Preparation
  1. Preheat your air fryer to 400°F (200°C) and set up a breading station with three bowls.
  2. In the first bowl, combine the flour, salt, black pepper, garlic powder, and paprika.
  3. In the second bowl, beat the eggs.
  4. In the third bowl, mix together the shredded coconut and panko breadcrumbs.
Breading the Shrimp
  1. Dip each shrimp into the seasoned flour, then into the beaten eggs, and finally coat with the coconut-panko mixture, pressing lightly to ensure it sticks.
Cooking
  1. Arrange the breaded shrimp in a single layer in the air fryer basket, making sure they are not touching.
  2. Lightly spray the shrimp with cooking spray and cook for 8-10 minutes, flipping halfway through.
