- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Slice the zucchinis into thin rounds, aiming for about 1/4 inch thickness.
- In a shallow bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Dip each zucchini slice into the mixture, ensuring both sides are coated, and shake off excess.
- Lay the coated slices in a single layer on the lined baking sheet.
- Lightly spray the zucchini chips with olive oil cooking spray.
Baking
- Bake the zucchini chips for 20-25 minutes, until golden and crispy.
- Remove from oven and let cool slightly before serving.
Notes
Store leftovers in an airtight container in the fridge for about 3 days. For freezing, layer uncooked chips between parchment paper in a freezer bag for up to 2 months.
