  • 1 large head cauliflower, cut into bite-size florets
  • 3 tbsp olive oil Can substitute with avocado oil or melted butter.
  • 3 cloves garlic, minced Alternatively, use garlic powder.
  • 1/2 tsp smoked paprika Regular paprika can be used if smoked paprika is unavailable.
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup finely grated parmesan cheese Can substitute with grated Pecorino Romano or nutritional yeast.
  • 2 tbsp fresh parsley, chopped, for garnish Can substitute with chopped thyme or dill.
  • Lemon wedges, for serving Balsamic vinegar can be used for tang if lemons are unavailable.

Method
 

Preparation
  1. Preheat your oven to 425°F and line a large baking sheet with parchment paper to prevent sticking.
  2. In a large bowl, toss the cut cauliflower florets with olive oil, minced garlic, smoked paprika, garlic powder, salt, and pepper.
Roasting
  1. Spread the cauliflower in a single layer on the prepared baking sheet with the cut sides facing down.
  2. Roast the cauliflower for about 18 minutes, then carefully flip the florets.
  3. Sprinkle the finely grated parmesan cheese evenly over the top and return to the oven.
  4. Continue roasting for another 7-10 minutes until the edges are golden brown and the cheese is crispy.
Serving
  1. Remove from the oven, garnish with fresh parsley, and serve warm with lemon wedges on the side.

Notes

When selecting cauliflower, choose one that is firm and compact. Store it in the refrigerator in a perforated plastic bag to maintain freshness. Make sure to wash the florets thoroughly and cut them to uniform sizes for even cooking.
