Ingredients
  

For the roasted chickpeas
  • 1 can chickpeas, drained and rinsed Look for canned chickpeas without added salt or preservatives.
  • 2 tablespoons olive oil
  • 1 teaspoon paprika Smoked paprika can be used for a deeper flavor.
  • to taste teaspoon salt and pepper
For the salad
  • 4 cups mixed greens Can substitute with spinach or arugula.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced Or use avocado for creaminess.
  • 4 ounces feta cheese, crumbled Can substitute with goat cheese or omit for vegan version.
For dressing and garnish
  • 2 tablespoons lemon juice Freshly squeezed for best flavor.
  • to taste Fresh herbs (parsley or mint) for garnish

Preparation
  1. Preheat your oven to 400°F (200°C). Drain and rinse the chickpeas, then let them dry.
Roasting Chickpeas
  1. In a bowl, toss the dried chickpeas with olive oil, paprika, salt, and pepper until well-coated.
  2. Spread the seasoned chickpeas on a baking sheet in a single layer. Roast them in the preheated oven for about 20-25 minutes, shaking the pan halfway through for even roasting.
Assembling the Salad
  1. In a large bowl, combine the mixed greens, halved cherry tomatoes, diced cucumber, and crumbled feta cheese. Gently toss the vegetables.
  2. Once the chickpeas are roasted and crispy, remove them from the oven and add to the bowl with the vegetables.
  3. Drizzle with lemon juice and gently toss everything together to combine flavors without wilting the greens.
Serving
  1. Garnish your salad with fresh herbs like parsley or mint for an extra burst of flavor.
  2. Serve the salad immediately to maintain its crunch and freshness.

Notes

Keep the salad fresh by preparing just before serving. Store in an airtight container in the fridge for up to 3 days. For freezing, keep the chickpeas separate from the salad mix.
