Ingredients
  

For the Potatoes
  • 2 pounds small potatoes Look for firm potatoes with thin skins.
  • 3 tablespoons olive oil You can substitute with avocado or grapeseed oil.
  • 3 cloves garlic cloves, minced Adjust amount based on preference.
  • 2 tablespoons fresh herbs (rosemary or thyme) Dried herbs can be used as a substitute.
  • 1 teaspoon salt Or to taste.
  • 1/2 teaspoon pepper Or to taste.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large pot, cover the small potatoes with salted water and bring to a boil. Cook until fork-tender, about 15 to 20 minutes.
  3. Drain the potatoes and let them cool slightly in the colander.
  4. Lay the cooled potatoes out on your prepared baking sheet and gently smash each potato using the bottom of a glass or a potato masher.
  5. Drizzle the smashed potatoes with olive oil, ensuring they are coated well. Sprinkle with minced garlic, fresh herbs, salt, and pepper.
Baking
  1. Place the baking sheet in the preheated oven and bake for 25 to 30 minutes or until potatoes are golden brown and crispy on the edges.
  2. Once crispy, remove from the oven and serve hot.

Notes

When selecting potatoes, choose those that are similar in size for even cooking. Store leftovers in an airtight container in the fridge for up to three days or freeze for up to two months.
