  • 2 medium zucchini, grated Salt to remove moisture
  • 1 clove garlic, minced or finely grated
  • 1 large egg Helps bind the ingredients
  • 1/2 cup flour or breadcrumbs For structure
  • 1/2 cup Parmesan cheese, grated Adds flavor and crisp edges
  • 1 teaspoon black pepper
  • 1/4 teaspoon chili flakes Optional for heat

Method
 

Preparation
  1. Grate the zucchini and combine it with salt. Let sit for 10 minutes to draw out moisture.
  2. Squeeze the zucchini in a cheesecloth or clean kitchen towel to remove as much water as possible.
  3. In a mixing bowl, combine the grated zucchini with garlic, egg, flour or breadcrumbs, Parmesan, black pepper, and chili flakes. Mix until well combined.
Cooking
  1. Heat a skillet over medium-high heat and add oil.
  2. Form small patties from the mixture and place them in the hot skillet.
  3. Fry the patties until both sides are deep golden, about 3-4 minutes per side.
  4. Let the cooked patties rest on a paper towel for a minute before serving.

Notes

Serve immediately for the best texture. For leftovers, store in a sealed container for up to 3 days. Reheat in a skillet or air fryer for optimal crispiness.
